2007-2008 sezonunda, Karl-Heinz Feldkamp ile yeniden yapılanan Galatasaray’ın ilk transferlerinden biri Barış Özbek oldu.

Almanya Yerel Ligi takımlarından Rot – Weiss Essen’de oynayan, aynı zamanda Almanya 21 Yaş Altı Milli Takımı’nda da 12 kez forma giyen Barış, sürati ve pres gücüyle dikkati çekiyordu. Bu özellikleri, gerek keşfedilmesinde, gerekse Feldkamp’ın sisteminde kilit rol oynamasında etkili oldu.

BG Schwerin altyapısında futbola başlayan Barış Özbek, 2003-2004’te Tus Hordel’de forma giydikten sonra 2005’te Rot-Weiss Essen altyapısına geçti. Birçok gurbetçi oyuncu arasında sivrildi ve iki sene boyunca A takım forması giydi. 39 maçta 1 gol attı. 2007-2008 sezonunda da takım arkadaşı Serkan Çalık ile birlikte Galatasaray’a transfer oldu.
